moto


Homaru Cantu's moto: truly a tantalizing, eyes wide open, molecular gastronomic experience! Continually surprised and entertained as NOTHING delivered to our table was as it seemed! We never knew what to expect next or how or when it would arrive. Homaru Cantu uses innovative techniques in the kitchen like infusing nitrogen and CO2 into food and has even invented an edible paper! We are still trying to figure out how they fooled us with some of these dishes, like I said nothing was what it appeared to be. moto's team was truly inspiring with their revolutionary creativity and gorgeous, clever presentations. Our palettes were totally indulged and spoiled for five+ hours as we made our way through the Grand Tour of moto (GTM) and wine progression! Scientific. Futuristic. Artistic. AWESOME.

(a candle, made of infused oil, had been burning at our table until it was poured over puréed french fries)




SEARED buffalo hot wings


(Cantu's edible paper that tasted exactly like buffalo wing sauce)

(in Ice Pop form)




CUBAN pork sandwich


(this was one of our favorites, a sandwich that looked just like a cuban cigar...WHAT?...ridiculous)




SHABUccino


(shabu beef soup, with teeny tiny vegetables and made just like a cappuccino, complete with a sugar cube made of white truffle and sea salt)




CO2 PINEAPPLE & jerk


(a slice of pineapple infused with C02 tickled our tongues with a pipette with jerk flavored sauce to pour over)




DUCK & molé


(a cannoli stuffed with duck, molé sauce and powdered sour cream)




STRAWBERRY flakes?


(fresh strawberries frozen with dry ice and vanilla chips)




RASPBERRY soufflé


(the lightest soufflé EVER, made with absolutely no egg!)




RAINBOW sprinkles


(savory cupcake made with foie gras)




POPPYSEED & lemon


(made to look just like lemon poppyseed bread...it was actually lemon poppyseed ice cream!!)





ACME s'mores

BURGER with ketchup


(a s'more bomb that exploded in your mouth with a marshmallow wick that actually ignited)

(banana sundae in the form of a hamburger complete with cheese and lettuce)
